Analysis of thermooxidation progress in organic and conventional soybean oils by steady-state fluorescence spectroscopy

Abstract

The reduction in fluorescence intensity (λem.~430 nm/λexc. 340 nm) of conventional and organic soybean oils, heated at 175°C during different periods, indicates the progress of lipid thermooxidation.
